Chickpea and Spinach Stir Fry Bowl

Ingredients
1 can chickpeas, drained and rinsed
2 cups fresh spinach
1 small onion, sliced
1 cup cherry tomatoes, halved
1 tablespoon olive oil
1 teaspoon paprika
1 teaspoon garlic powder
Salt and pepper to taste
Cooked brown rice or quinoa for serving
Optional toppings: lemon wedges, parsley, toasted seeds
Instructions
Heat olive oil in a skillet over medium heat.
Add the onion and cook until soft.
